Grated cheese, portioned aged cheese and mozzarella each ask different things of their packaging. Starting from the product avoids costly mistakes.
Grated cheese
It is sensitive to oxygen, moisture and fat rancidity. Barrier films are used, often with modified atmosphere (MAP), in resealable bags or trays.
Portioned aged cheese
Modified atmosphere or vacuum, barrier to gases and oxygen, often reclosability. The film must hold the gas mix for the full shelf life of the product.
Fresh cheese and mozzarella
Brine, reliable seals, mechanical strength: here seal integrity and line cleanliness matter.
Butter
PE-coated paper or aluminium-laminated paper: barrier to grease, light and aromas, and good foldability on packaging machines.

What is modified atmosphere?
A gas mix, usually carbon dioxide and nitrogen, that replaces the air in the pack and slows deterioration. The film must hold it in.
Why does sliced cheese change colour?
Often because of the effect of light and oxygen on fats and pigments. Barrier films and opaque or pigmented films help.
